Bring It On, 2012!

It's New Year's Eve!


What's the best way to bring in the New Year? Hopefully not like the image above! 😉

With loved ones! I'm planning on staying up all night with the family. Maybe we'll even be really cheesy and watch the ball drop on TV! I haven't done that in years…

That's what we've always done: stay up and watch the clock with family and friends. Although I have gone to parties on New Year's Eve, I honestly prefer to stay in. There are far too many idiots on the road, especially on a "big" night like New Year's.

Expectations are high for the coming year! There are plenty of people worried about the Apocalypse and the end of the Mayan calendar… I think there will be some kind of big change. Something will happen because people believe it will happen. Millions of people are convinced that something will occur, so logically the masses will interpret some event or big change as "predicted" to occur in 2012 .

Do you think something drastic is going to happen in 2012? I'm not sure what's going to happen, but I bet it will be an eventful year!

I'm hoping that 2012 brings us all good times, health, and happiness. Happy New Year!

Merry Christmas to the Kids!

A horse of course!

Twice I have received a horse for Christmas. My first pony was given to me by Santa when I was 8 years old one snowy Christmas morning. She was the best first pony! I learned to ride throughout my childhood with her and finally sold her to another little girl when I was a teenager. I had outgrown her and it was time for her to teach another little girl how to ride.

This year my husband arranged for Santa to bring another amazing equine gift, and she is a beautiful registered gray Paint mare named Cody. She is wonderful and I love her so much! I can’t wait until this rain stops so I can go riding!


My Christmas Present!

We also added another horse to the farm this Christmas…a sweet old chestnut Quarter Horse gelding named Money. He is the perfect “babysitter” type of horse for the girls! We are so fortunate to have found some of the best horses around and had them delivered to our house by Santa for Christmas… 😉

I must say that receiving a horse for Christmas is truly special, but giving a horse to someone is so rewarding and special. Seeing the kids’ faces light up on Christmas morning this year was one of the most heartwarming moments of my life.

Simply Summarized: 2011

This year has truly flown by! I can’t believe 2011 is almost over. I wonder if 2012 will go by just as fast…

2011 Year of the Turtle

My 2011 summarized as much as possible in 12 sentences:

1. In January I was laid off from my job at the post office as a mail carrier.

2. Eddie and I decided on a theme for our upcoming wedding in the summer and purchased the bridesmaids dresses in February.

3. Throughout March I spent most of my time researching craft ideas online for a completely DIY wedding.

4. In April we had birthday celebrations for Eddie and Evie and mailed out our wedding invitations.

5. May was spent crafting crazily and planning the most amazing surprise birthday party for my best friend, Emily.

6. In June we celebrated Annabelle’s birthday and I enlisted the help of my Mom, Eddie, and my good friend Candy for the wedding crafts because I was feeling very overwhelmed.

7. July was the most amazing month because I married my true love at the most beautifully simple ceremony.

8. August was quite eventful: Annabelle’s first month of school (I tried not to cry on her first day of school!), I started blogging/freelance writing, and we worked relentlessly on getting the field ready for horses!

9. When September came we finally finished the field and got horses at home!

10. In October the kids picked their Halloween costumes; Evie made her angel costume and I made Annabelle’s Indian princess costume.

11. November came and we realized how close Christmas was…and how broke we were.

12. In December we scrambled to find the perfect Christmas gifts for our loved ones on eBay, Wal-Mart, various dollar stores, and of course making the most special gifts by hand…and we found the perfect horse for the girls! (And my loving husband found a horse for me!!!)

Off for Christmas Break :)

eat as much as you can

Hi everyone! I have decided to take a few days off for Christmas. I have a TON of crafts and baking to finish before the holidays…so I need to concentrate on finishing my checklist!

I made a whole bunch of cookies last night (4 batches of 30+ cookies) and today I am concentrating on making banana bread, fudge, and rice krispies. Hopefully I will be able to make some yummy truffles too!

What Would You Do With 70 Pounds of Cream Cheese?

It’s true. Over 70 pounds of cream cheese unexpectantly came into my life yesterday afternoon. Ever since it arrived I have been wondering…what am I going to do with all of this?! 

I decided that with Christmas so close, this must be some kind of blessing. We came across this cream cheese so that I could use it to make treats for our friends and family. I know you can make lots of yummy things with cream cheese…I am just not sure what to do with it. Here are some ideas I came up with:


The first thing I thought of was cheesecake. Unfortunately, I have never made a cheesecake before and I have no idea how to do it. Does anyone have a favorite cheesecake recipe?


For some reason I feel like mixing cream cheese into brownies sounds like a good idea. Maybe it will make them more

creamy and gooey…mmm… Has anyone ever heard of doing this before?


Honestly I’ve never made a cheeseball before either…but I think this would be pretty simple to make. Just mix cheese with the cream cheese, form into a ball, and roll in some finely chopped nuts. I have all of those ingredients! Perhaps I will give a cheeseball to my cheesiest friends…hahaha.


Same as the brownies…my intuition tells me that mixing cream cheese into cookie dough would make the cookies better somehow. Maybe I need to go practice my alchemy in the kitchen? Muah-aha-ha-haha-ahahaaaa!


Oh my word! I can make truffles! Easily at home?! YES! I am so doing that!

It is the best of times, it is the worst of times.

I Love the Holidays

I love the holidays because there is a special warmth to this time of year. People are kinder just because “it’s Christmas” and everyone is more compassionate than usual.

We are encouraged to give to those we love. Although I do like receiving gifts (who doesn’t haha), I love giving. It makes me feel so happy to give something special to the people I love.

Bah Humbug!

There is also the flip side of the holiday season. Money! Or the lack thereof. Hah. The prices of everything is grossly inflated…meaning that giving is become very expensive. I usually have a long list of people I want to give gifts to. Unfortunately this year I cannot afford to give gifts to everyone.

It’s hard to pick out the people who “really matter” when it comes to gift-giving. I wish money was never an issue. I guess we just do the best we can… I try to at least let everyone know I am thinking of them with a sweet note or card this time of year. If only I could afford to buy stamps…hahah.

Do Away With the Commercialized Christmas

I think that the holiday season has become too commercialized anyway. Why should we have to go out and buy an excessive amount of gifts for everyone on our lists? Who can afford to do that?!

This time of year is supposed to be about family, friends, sharing, and giving. That doesn’t mean break the bank, it means give what you can–even if it is only some quality time together.

Ode to Coffee

Good morning world. (It’s morning where I am, anyway…) I’m awake now. I’ve had my coffee. 😉

This morning I completed my usual half-asleep ritual: fill coffee pot with water, put filter in, measure coffee, and wait as it gurgles into a glorious pot of bittersweet coffee…ahh. Then I began to wonder, why coffee? What’s with the ongoing international obsession? Or worse, where would we be without coffee?

Would we be a bunch of coffee zombies staggering around mumbling, “Cofffeeeeee, coffeffeeeeee….ahuggghh coffeeeeeee…”?

I hope not! Hahah. We would just find a new addiction. Tea, perhaps? Or…chocolate…mmmm….

It’s not the coffee we need. It’s the caffeine. We can fulfill our caffeine addiction with tea and chocolate too. So why have we chosen coffee for so long? I drink coffee because my Mom drank coffee. It just seemed like the right thing to do when you’re a grown up.

Caffeine is a stimulant. That is why so many of us caffeine addicts seek some kind of “fix” in the morning. It stimulates breathing, heart rate, and other nervous system functions. Once consumed caffeine remains in the body for up to 6 hours! Wow. I must have a constant level of caffeine coursing through my veins…haha. I usually drink…ahem…several cups of coffee a day.

So there you have it–my weakness is coffee! And now, a poem for my beloved coffee:

Do You Have 5 Talents?

I can do many things. After all, I am a mother. Haha.

I guess only a few of the things I do regularly would be considered “talents.” If I want to do something, I do it. I can do anything I set my mind to. Usually I do very well because I tend to strive for perfection.

1. Writing

Throughout my entire life I have used writing as a means of release, escape, and passion. I love to write and I write well. In school my teachers loved my writing and said that I was very talented. I write poetry, stories, factual articles, essays, white papers, and so much more. One day I’m even going to write a book! I just can’t decide what it will be about yet…

2. Art

This is a broad category! That’s because I can do so much that is considered “art.” Drawing, painting, crafting, creating, and more are some of the things I do on a regular basis. Lately I’ve been sewing blankets, designing some t-shirts, making jewelry, drawing, and tanning deer hides. Wow…I just now realized how many projects I am working on at once. Hah!

3. Horseback Riding

I love riding and training horses. This is one of my absolute favorite things to do. Life would not be complete without horses! I really enjoy spending time with these majestic creatures. For some reason I am able to feel a stronger connection with horses than I can foster with most people.



4. Hangin’ With My Dogs

I LOVE my dogs. I’ve always been pretty good at training dogs. I guess I’m good at working with dogs because I believe in their intelligence…I know they can understand me. You just have to know how to communicate with them! They are a special part of my family as well. 🙂 I love playing with them, teaching them to be obedient, and watching them play and grow.

5. Getting Writer’s Block

How fitting! My #1 talent is writing, so of course it makes sense to say that I am also very good at NOT writing. Hahah. Usually when you write a lot you have days that are just not productive. It comes in waves! Sometimes I have so many ideas and I want to write all day…other times I can’t think of anything interesting to write about for weeks.
